Strawberry Cake

I read once upon a time that if you want to have a treat, then you should make it yourself. Because it will be much better for you then the bought stuff in the shop. So I made it my mission today to use all the lovely fresh strawberries I got it the shop and made a Gluten Free Strawberry Cake! Yum is all I have to say about it! I took a recipe from Rachel Allen’s "Cake" book and changed it around a little! 

This is how it looks like:

And here is my version of the Strawberry and White Chocolate Cake:

You will need

175g Butter

175g Caster Sugar

2 Eggs

180g Self-raising flour (gluten free)

100g Grounded Almonds

100g White Chocolate (chopped into pieces)

450-500g Fresh Strawberries (sliced)

Preheat the oven to 180°C.

Cream the butter until soft and mix the sugar under. Add the eggs and mix it all together. I add then the flour and once all combined I add the almonds and mix them under. Then I add the strawberries and the white chocolate and fold them under.

The mix fill be quite dry, but the strawberries are very juicy and will add moisture to the cake! Once everything is combined I tip the mixture into a round tin, that is greased.

Put everything into the oven for 50-60 minutes, till the cake is well risen and golden brown on top!

Once out of the oven let it cool for about 20 minutes and then be quick to get a piece for yourself!

One Day Late

Yesterday was a quite busy day! A lot of work, sun and a fundraiser in the evening to get some extra money for our local creche! All together a lot of happy moments and fun things. So I wasn't able to pin point a happy moment all day so I picket a picture I took in the morning on my sunny walk. I should have taken one of my bed, because that was the happiest moment all day, when I was finally able to fall into it. But I was to tired to take it and to lazy to post anything last night, well I wasn't home till past midnight. So is that then really early in the morning? Or to late at night?

Anyway, today is my lazy day and the sun is supposed to shine! So lots of sunshine and free time!

Daisy

Across from my house is a little green area as part of our estate we are living in and at the moment that little meadow is covered in daisies! I hope they are not cutting them soon! I enjoy walking past that field of flowers every day!

Relaxing

One thing I am very bad at is to sit down and relax! My version of relaxing is to take a hike through the Burren, go for a long walk or take the horse for a ride on the beach! But in a way these things are not very relaxing, especially not for the body and my dear muscles. So this little habit of mine caused me a lot of pain in the last two to three weeks and after my GP told me to just relax and take pain killers I had to go to physiotherapy. But I am so glad I did! I am well able to walk and turn now, but I also learned a little exercise to trick all my muscles into thinking that they are very relaxed. All of that gives me a lot of relieve. And now my job is to detox my body and most of all my muscles!

Flowers Everywhere

Every morning I bring my dog for a quick walk around the village! In the rain or sunshine! And during the winter months it can be quite hard! But once summer is here the roads are covered in pretty flowers! So it is well worth a trip in the morning!

No wonder that they call it the green road!

Herbal Essences

Love to have a shower with lots of nice smelling things. Especially when I have to wash my hair! And what smells better then Herbal Essences! It is great for my hair and you can choose from so many different fragrances and types to suit your hair! I am just in love and after a long day of work there is nothing more relaxing then a hot shower and a relaxing fragrance!

Strawberry Time

Summer should be here, but for some strange reasons it takes it’s time to come to Ireland. But that doesn’t stop to have lovely sweet strawberries in the shops! So nice to have a bowl (in this case a glass) of them after lunch or dinner! I could eat them all day long!

Milk Cow

This little cow is my very fancy milk can! I got it some time ago in Medows & Byrne. I fell in love with it, just because it is a milk can in the shape of a cow! How cute is it?! It makes me smile every time I use it and sometimes it ends up being my vase for the broken flowers out of the garden!

When I see them again I think I will buy more, just to have for flowers and as table decorations! Maybe they will have different animals or fancy shapes too!

Appreciation

Appreciate the small and big things in life! One big thing is your health you have been given! You never really now what you've till you don't have it anymore! So many things happened in the last week that I really get to appreciate that everybody in my family is mostly top fit and in good health! Hope it will stay like this for a very long time!

Back to Healthy

Back home. Back to normal! Which means for me back to healthy living and most of all healthy eating! Portion control is a big thing and I never do that when I am on holidays! And all the lovely treats and cakes have to go as well! So here we are with day one and a very healthy breakfast! I love porridge in the morning with some fresh fruit and a nice cup of tea! In a way all of this makes me feel a lot better! As much as I love my treats and guilty food (as I like to call them) they need to go again! Till next time!!!

What a wonderful time I had here in Berlin! I was able to spend some amazing days with people I love! What a relaxing weekend, with lots of fun! Today is my last day here before we fly back to Dublin!

Two Days - Very Happy

A weekend full of happiness! That is how I would describe my weekend! My Granny turned 80 on Thursday and that needed to be celebrated! So my whole family from my fathers side gathered in my dad's home town to celebrate an amazing woman! I had a ball. All my loved once in one spot, good food, music and a lot of fun! I love my family very much and weekends like these are just amazing! Everybody has a good time and enjoys the time together!

So I did not forget to post my day 21! I just did not have internet in the hotel we went to! They are very traditonell, but in a way it was just nice, not to be connected to the whole world!

Family times are good times!

Afternoon Tea

Today I went to see my Granny! And like always she made sure to give us the best afternoon tea possible! We had rhubarb cake and lovely coffee in the sunshine! It was so nice to sit outside with my family and enjoy this lovely homemade food!

Dity Dancing

Well I love my holidays! Love being home! Love being in the city and love spending time with my family! Tonight I have a special treat for my mum and me! We are going to Dirty Dancing! Can't wait to go and see it! My mum went a few years ago in Hamburg, but I never had a chance to see it! But this time the timing was perfect!

Makeup Masterclass

No I didn't forget to write my post or even take my picture, but my laptop decided to be on strike last night. So here it is really early this morning!

I went to a Masterclass last night in Limerick with Inglot! What a fun night and what fun to play with all the colours and to explore the shop just like that! And for the first time in my makeup career I went and got myself some Inglot products and I think there might be more to follow for my kit!

Our teacher for the class was the Makeup Fairy. The looks where lovely and it was nice to get to know all the different products!

Food like Home

Some people might not get this one, but if you moved away from home to a different country or even spend some time in abroad (and with that I mean longer then the two week summer break) you might be able to understand! There is no other place like home and with that I mean the food too! I live in Ireland for nearly seven years now and every time I go back home I get excited! I get to eat all the things, that are just not available here. And sometimes when you really really want something then it is really hard and you might get home sick or miss the perfect Sunday dinner you would get at home. But some really smart people opened up a shop (probably years ago) that carries a lot of German, Polish, Russian and other fancy products! So yesterday I finally managed to take the turn in the round about and go to this shop (paradise). I came out with so many nice things I would normally go and get when I fly to Berlin. But they had them all in this magical shop! Not to mention that I am broke now, but food wise so much happier! So today my Sunday desert is cherries out of a glass! So, so yummy!

And if no one can relate to this, then just take me as a food addict!

Morning Tea

Happy Friday everyone! A few more hours of work and then it is time for the weekend! And there is nothing better then to start your day with a good cup of tea!

I hope everybody has some nice plans for the weekend and that the weather will be kinder to us this time. My plans are spring cleaning and packing my bag. I fly home next week for a few days for my grannies birthday. But next week will be a very busy week, so I better get all of my tasks done now!

So nice to walk into the kitchen on a rainy day, but to see some beautiful flowers at the window! They make the day less grey and make me smile! Bright colours lift the mood, for me anyway!

So if you are in a bad mood in the mornings just stop at you local shop and bring some nice flowers home! They will lift your mood too!

Baby animals

I went for a walk in the morning past a field with some mares in it, which I knew would have foals soon, so I got very excited to see one foal walking through the field with his mummy! Well not really walking more staggering! So cute! Can't wait for the others to be born!

Monday is a day off today here in Ireland. The weather is still quite bad so the only thing I will do today is take it easy, like my little friend here in the garden!

It’s a long weekend and what is better than to start it with a sleep in! It is also a very rainy day, so I don’t feel to bad for staying in bed! My cat things the same and gives me some cosy company!

I love rainy days! But only if I can sit at home, have a tea and sit in bed! But today I got very lucky! While I tried to get some shopping done in Galway it poured down now and then, but I ditched the rain every single time! Go me! But I also got a pretty amazing view when I went back to the car! (dry)
