I read once upon a time that if you want to have a treat, then you should make it yourself. Because it will be much better for you then the bought stuff in the shop. So I made it my mission today to use all the lovely fresh strawberries I got it the shop and made a Gluten Free Strawberry Cake! Yum is all I have to say about it! I took a recipe from Rachel Allen’s "Cake" book and changed it around a little!
This is how it looks like:
And here is my version of the Strawberry and White Chocolate Cake:
You will need
175g Butter
175g Caster Sugar
2 Eggs
180g Self-raising flour (gluten free)
100g Grounded Almonds
100g White Chocolate (chopped into pieces)
450-500g Fresh Strawberries (sliced)
Preheat the oven to 180°C.
Cream the butter until soft and mix the sugar under. Add the eggs and mix it all together. I add then the flour and once all combined I add the almonds and mix them under. Then I add the strawberries and the white chocolate and fold them under.
The mix fill be quite dry, but the strawberries are very juicy and will add moisture to the cake! Once everything is combined I tip the mixture into a round tin, that is greased.
Put everything into the oven for 50-60 minutes, till the cake is well risen and golden brown on top!
Once out of the oven let it cool for about 20 minutes and then be quick to get a piece for yourself!
